Fit Food Fridays- Blueberry Oat Pancakes

Yummy…who doesn’t love pancakes? Seriously?  Well try this amped up healthy version guilt free….

What ya gonna need:

Combine oats, cottage cheese, eggs and vanilla in a blender or food processor; process until smooth. Gently stir in the blueberries. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Spoon about 2 tablespoons batter per pancake into pan. Cook 3 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over, and cook 3 more minutes or until golden.

Combine yogurt and maple syrup; serve alongside pancakes.

Serves 2 when making 3 3-inch pancakes

about 400 calories.

Fit Food Fridays- Lemon Herbed Tilapia

Since losing weight and maintaining is about 80% diet, I figured I would feature Fit Food Fridays.  Recipes that I have used during my weight loss and workouts.  So without further adieu….

What ya gonna need:

6oz tilapia filet

juice of 1 lemon

1/2 tsp dried thyme

1/2 tsp dried rosemary

3 tbsp whole wheat bread crumbs

1tsp olive oil

1 cup of green beans, steamed

4 tbsp marinara tomato sauce

salt and pepper

Prep: Preheat your oven to 400°. Spray a baking dish with nonstick cooking spray and place tilapia filet in dish.  Season the fish with salt and pepper, then drizzle with olive oil, lemon, sprinkle with herbs, then dust with bread crumbs.  Bake in the oven for 20 minutes or until fish flakes easily with a fork.  Meanwhile, steam your green beans, heat up your marinara….top beans with sauce, serve and Enjoy!

serves: 1

Cals: 383

Protein: 42g

Carbs: 29g

Fiber: 6g

Total Fat: 10g

365 Days After:180° and 80lbs Later

Hello World,

Happy Halloween :)

This is my first blog post ever. So be kind.

I guess I am kinda late to the party. I should have been documenting this journey as of last Halloween. But to be honest, I didn’t think I would have come as far as I have.

You see, 365 days ago, Halloween 2009, I weighed in at a whopping 253.5 pounds. I was FAT! I wore a size 20 in jeans! I was in XXL tops!

Today, 365 days later, I weigh in at 173 pounds! I wear a size 9/10 in jeans and Medium tops?! I haven’t been this size since about sophomore year in High School and even that was short lived (read:weight issues).

So…how did I do it, you ask?

Well by hard work, pure discipline, healthy diet and a lot of sweat! I incorporated healthy eating into my daily routine and made it a habit. The same with exercising. I discovered some amazing at home workouts that I was able to bang out in 30-45 minute.

‘Cause let’s face it. I have 2 toddlers. I work full time. Husband with a rotating schedule. I DON’T HAVE TIME! So these exercise programs were great in getting in a super effective workout in not a lot of time.

They are ChaLEAN Extreme and TurboFire. Both created by my mentor and numero uno motivator…Chalene Johnson. The woman is amazing and has changed my life. I seriously recommend following her on Twitter (@ChaleneJohnson) and Facebook. She is an amazing human being.

Another great thing about these programs is that they offer a nutrition plan for you to follow. As long as you make the decision to commit, you will succeed. NO doubt.

I had such amazing success the 1st time around with them, that tomorrow, I am starting my 2nd phase of ChaLEAN Extreme. I cannot wait to see the guns I am gonna get!

About Me

I am still a work in progress.

"My name is Allison, how can I help you?" That's how I answer my phone at work every time it rings....

I am a busy woman. I am 30 years old. I have 2 toddlers, girls...named Angelena and Isabella. I have been married for 5 years to a very busy man, his name is Tony. And, I have Samantha the cat....she has it easy.

I work at my day job Sunday thru Thursday, 45 hours a week. I don't LOVE it though. What I LOVE is getting myself healthy.

You see, after the birth of my 2nd daughter, I gained A LOTTA weight...close to a metric ton. Not really. but it felt that way...but I made excuses.... "I'm so busy, I have no time.....It's soooo hard to lose weight."

One morning, looking in my mirror, I broke. I hated who I was. Despised myself. How can I take care of my family, my beautiful girls, If I didn't want to take care of myself?

So I made a decision, things had to change. I had to take responsibility of my time and my health and DO MORE!

So, that's what I did. I didn't have time to go to the gym, so I found at home workouts that were fast and effective. I woke up 45 minutes before the kids and the husband and got my ass moving. I started eating healthier, less crap, more REAL food, smaller portions.....And you know what?

IT WORKED! In a year I am down 80lbs. I'm skinnier now than I was in High School....amaaazing.

With this, I was also forwarded the opportunity to help others do the same. This is what I LOVE. If I can help just one other busy, tired, stressed out, overweight mom or dad or anyone else. Show them, you do have that time to make yourself the number one priority, even if for 30 minutes of your day....GREAT!

The chance to pay it forward and help someone else achieve what I have achieved, the health I got back, the LOVE I have for myself. I will be truly happy.
